Baked Eggs in Spinach and Potato Mash

    • 4 eggs
    • 2 cups spinach, chopped fine
    • 2 large potatoes, boiled
    • 1/2 cup cheddar cheese
    • 1/2 cup milk
    • 1 tsp black pepper
    • 1 tbsp olive oil
    • 1 tsp mustard paste
    For the tomato sauce:
    • 4-5 large tomatoes, chopped
    • 1/2 tsp dried basil, oregano, nutmeg each
    • 1 tsp black pepper
    • 1 tsp salt
    • 1 tbsp olive oil
  • Method

    1. First prepare the mashed potatoes. Mash the boiled potatoes, add salt to taste and mustard paste. Mash  well, then pour in the milk and mash it again with your hands or whisker. 
    2. Next, heat oil in a sauce pan and add the chopped spinach. Just cook it for 2 min covered, until it wilts. Let it cool for a minute and keep aside.
    3. For the tomato sauce, heat olive oil in a pan, fold in chopped tomatoes, cook over medium heat until it becomes mushy and fragrant.
    4. Add in the herbs and spices, stir well, pour in a splash of water and cook covered for 10-15 minutes. 
    5. In a greased gratin dish, first spread the mashed potatoes evenly with a spoon. On top of it spread some cheese and then wilted spinach.
    6. Next layer the tomato sauce evenly and spread it well. Make four holes in the dish by swirling a fork or spoon.
    7. Pour in the eggs in these holes and sprinkle cheese over the rest. Immediately place into a preheated oven at 180 degrees for 10-12 minutes or untill eggs get just set. Don't over bake or the eggs will burn.
    8. Cut into squares around each egg and enjoy !!
