Radish & Watercress Salad

Spring flavours....

Serves 4

Cooking time 15mins (if adding potatoes)


  • 100g radishes, halved
  • 100g of watercress, picked and washed
  • 100g of rocket, picked and washed
  • 1 handful each of walnuts and almonds
  • 1 tbsp of parmesan cheese, grated or shaved
  • 3-4 tbsp olive oil
  • 1 tbsp lemon juice
  • A pinch of salt (0.25g)
  • A pinch of freshly ground black pepper (0.05g)



1. Place the watercress and rocket in a salad bowl with the halved radishes.

2. Drizzle with extra virgin olive oil just to coat. Add the seasoning and toss well.

3. Scatter the nuts and sprinkle the Parmesan on top before serving. For a more substantial meal, put some cooked and sliced new potatoes or some cooked chicken through the salad.
