Strawberry Yoghurt Ice Cream

Cooking time 5 hours or overnight

Top tip: Soften for serving

Before serving take the ice cream out of the freezer for 20 minutes to soften slightly.

Ingredients

  • 400g fresh strawberries
  • 500g low fat Greek yoghurt (approx 3% fat)
  • 1 tbsp unrefined caster sugar or 1tbsp honey

Method

1. Wash and hull the strawberries and place in a food processor or mash with a fork. Whizz until smooth, although a few small lumps left in is quite nice.

2. Add the yoghurt and sugar or honey and mix well. Place in a plastic freezer box and cover. Place in the freezer.

3. After 2 hours take out of the freezer and mix the outside frozen mixture into the soft mixture in the middle. Mix very well and put back in the freezer.

4. The ice cream freezes very hard and so before serving take out of the freezer for 20 minutes to soften slightly. Place back in the freezer to store.
